Estrada’s was a Fresno institution, serving generations from its home at 370 N. Blackstone Ave from 1917 to 1997. Founded around 1910 by Cruz Estrada—lovingly known as “Nini”—the restaurant’s famous recipes were never written down because, as she always said, “Just because you have a recipe doesn’t mean you can cook the food.” Now, over a century later, her grandson Randy (Ralph A. Dillard Jr.), the last family member taught directly by Nini, has carefully preserved and published the complete cookbook. This is not beginner’s cooking—it’s old-world, soul-filled food that takes time, effort, and heart.
